Let’s Talk Production – Mango Production in Guam

Although mango is a popular fruit in tropical and subtropical regions in the world, the local production of the fruit in Guam has been tricky due to the invasive plant disease known as anthracnose (a term used to describe a group of fungal diseases that typically cause dark lesions on leaves).
According to two vegetation surveys conducted in 2013, studies showed that the island produced 208,000-220,000 mango trees, yet most of them received little to no care. Thanks to the efforts of the University of Guam's Western Pacific Tropical Research Center, there are 29 thriving varieties at UOG's Ija Research & Education Center.

🇵🇭 Philippines: Mango with Shrimp Paste
A tasty snack that compliments both your salty and sweet tooth. Recipe from childhood.
Ingredients
Unripe mango
Bagoong (shrimp paste)
Peel and cut an unripe green mango. Scoop a small spoonful of bagoong (shrimp paste) on a plate, dip the fresh mango, and enjoy!
🇮🇳 India: Mango Lassi
Popular Indian dessert drink that’s creamy and refreshing with simple spices. Recipe from Swasthi’s Recipes
Ingredients:
1 ½ chopped mangoes
1 cup yogurt
½ cup milk
2 to 3 tablespoons sugar
¼ teaspoon cardamom powder
1 pinch of saffron
1 tbsp chopped nuts for garnish
In a blender, add your mangoes, sugar, cardamom powder and milk, and blend until the puree is smooth. Add yogurt and continue blending until the texture is thick and all the ingredients are mixed together. You can always adjust the ingredients and taste test to your liking. Garnish with nuts and enjoy!
🇹🇭 Thailand: Mango Sticky Rice
Famous street food dessert in Thailand and one you’ll be going back for seconds. Recipe from Tasty Table
Ingredients:
1 cup uncooked glutinous rice (sweet or sticky rice)
1 cup canned unsweetened coconut milk
3 tablespoons sugar
¼ teaspoon salt
1 mango, peeled, pitted, and thinly sliced
Wash the rice and soak it for at least one hour (or overnight). Make sure the water is enough to cover it. Drain the rice and line a steamer basket with cheesecloth and put the drained rice in the basket. Place the steamer over a large pot filled with water and cover it with a lid and steam the rice over medium-high heat for 20 minutes, or until it is tender.
Combine the coconut milk, sugar, and salt in a pot over medium heat, stirring until the mixture comes to a simmer. Take the sauce off the heat, but do not let it become cold. Mix ½ of the sauce with the cooked rice and let the rice sit for 15 to 20 minutes. Scoop out ¼ of the rice in a cup or mold, resulting in a round, slightly domed mound. Place each scoop of rice on a plate and top it with ¼ of the mango slices.
🇬🇺 Guam: Buñelos Månnga
Oh, don’t worry – we didn’t forget about mango doughnuts! Recipe from Pay-Less Supermarkets
Ingredients:
16 oz ripe mangoes
1 cup all-purpose flour
½ tsp baking powder
Vegetable oil (for frying)
¼ cup milk
½ cup sugar
⅛ tsp salt
Preheat oil over medium heat. Mix your mango and milk in a large bowl until the texture is smooth. Add your flour, baking powder, sugar, and salt to the bowl. Stir everything together until the batter is thick and smooth. Drop batter (2 tablespoons) into the hot oil and fry until golden brown.
